How to Make Vegan Mashed Potatoes

If you like ‘em smooth and creamy, these are the vegan mashed potatoes for you. No lumps, just light and fluffy. Step Two is the key: mashing the potatoes while they’re still hot before adding the vegan margarine and soy or rice milk.

Things You'll Need:

  • 5 large or 8 medium potatoes
  • ¼ to ½ cup soy or rice milk
  • 2 to 3 tbsp. vegan margarine
  • Salt
  • Pepper
  1. Step 1

    Peel potatoes and cut into quarters. Boil until potatoes easily break when poked with a fork, usually 20 to 30 minutes.

  2. Step 2

    Drain the potatoes. Beat immediately for 2 minutes, preferably with an electric beater on low setting.

  3. Step 3

    Add soy or rice milk and margarine.

  4. Step 4

    Beat your vegan mashed potatoes on a high setting another 4 minutes.

  5. Step 5

    Add more milk or margarine, if necessary, to reach desired consistency. Beat again.

  6. Step 6

    Add salt and pepper to taste. Stir and serve.

Tips & Warnings
  • If beating by hand, use a masher or fork for Step One to get out as many lumps as possible. Then use a whisk for Step Four, beating vigorously until the desired consistency is reached.
  • For variations on this vegan mashed potatoes recipe, try adding 1 tsp of garlic powder, onion powder or dill. For a spicy variety, try adding ¼ to ½ tsp. cayenne pepper.
