Things You'll Need:
- 5 large or 8 medium potatoes
- ¼ to ½ cup soy or rice milk
- 2 to 3 tbsp. vegan margarine
- Salt
- Pepper

Step 1
Peel potatoes and cut into quarters. Boil until potatoes easily break when poked with a fork, usually 20 to 30 minutes.

Drain the potatoes. Beat immediately for 2 minutes, preferably with an electric beater on low setting.

Add soy or rice milk and margarine.

Step 4
Beat your vegan mashed potatoes on a high setting another 4 minutes.

Step 5
Add more milk or margarine, if necessary, to reach desired consistency. Beat again.

Add salt and pepper to taste. Stir and serve.
