How to Make Kim's Chicken and Dumplings!

This is the ultimate in Southern comfort food. My friend Kim's recipe is easy to make, and tastes creamy delicious!

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1 lb boneless chicken, or more if it has bones
  • bouillon
  • 2 1/2 cups flour
  • 1/2 cup shortening or butter
  • 1 tsp salt
  • 1/2 cup milk
  • 2 eggs, slightly beaten
  • rolling pin
  • pizza cutter

Step1
Put the chicken in a pot with 2 or 3 cubes/tsp bouillon, and cover with water. Set on stove to boil. Meanwhile...

Cut the butter into the flour and salt, using a fork or pastry blender. Add the milk and eggs. Blend well.
Step3
(This is the fun part!) Roll dough out to about 1/4" thickness. Cut into 2" wide strips with the pizza cutter.
Step4
Once the chicken is cooked, deboned (if applicable), and chopped, put the dumpling strips into the broth with the chicken pieces. Cook 10 minutes uncovered, and 10 more minutes with the lid on.

Tips & Warnings

  • The dumplings definitely taste better made with BUTTER!
