How to Make Bran Flax Muffins

In today's health conscious world, everyone is looking for food that is not only healthy but tastes good. These scrumptious muffins are full of fiber and vital nutrients.

Instructions

Things You'll Need:

  • 1 1/2 cup of flour (unbleached white or wheat)
  • 3/4 cup of flax meal
  • 3/4 cup of oat bran
  • 1 cup of brown sugar
  • 2 teaspoons of baking soda
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 2 teaspoons of cinnamon
  • 1 1/2 cup of shredded carrots
  • 2 peeled shredded apples
  • 1/2 cup of cranberries
  • 1/2 cup of raisins (optional)
  • 1 cup of chopped walnuts
  • 2 beaten eggs
  • 1 teaspoon of vanilla
  • Mixing bowl
  • Wooden spoon
  • Muffin tins

    Making muffins

  1. Step 1

    In mixing bowl, combine flaxseed meal, oat bran, flour, brown sugar, baking soda, baking powder, salt and cinnamon.

  2. Step 2

    Carefully stir in carrots, apples, raisins, cranberries and nuts.

  3. Step 3

    Combine milk, eggs, and vanilla and add the mixture from Steps 1 and 2.

  4. Step 4

    Using a wooden spoon, stir until all ingredients are moistened, being careful not to over mix.

  5. Step 5

    Heat oven to 350 degrees. Fill muffin cups 3/4 full.

  6. Step 6

    Place in heated oven and bake 15 - 20 mins. Makes 15 muffins.

Tips & Warnings
  • Best hot out of the oven with butter or cream cheese on them.
