Tabouli is a middle-eastern salad dish, thought to have its origins in Lebanon. It’s a wonderful healthy dish. It’s often served with lamb or falafel and hummus.

It’s also a great salad to add to any rolled sandwich, whether on regular bread, pita bread or even in a burrito wrapper.

Instructions

Things You'll Need:

  • Bowl
  • 2 cups boiling water
  • 1 cup bulgur wheat
  • 1/2 cup scallions
  • 1 large cucumber, peeled, seeded, and diced
  • 3 tomatoes, medium size
  • 5 tablespoons fresh mint, chopped
  • 1/4 cup carrot, chopped
  • 1 cup chopped parsley
  • 6 tablespoons olive oil
  • 7 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/ 2 teaspoon black pepper
  • Lettuce leaves for the side of the bowl, if desired
  1. Step 1

    Put the bulgur in a bowl and cover it with boiling water. Let it stand for 45 minutes.

  2. Step 2

    Drain the bulgur, squeeze out the remaining water and put it in a serving bowl. You can use your hands to squeeze out the remaining water, or press down with a spatula.

  3. Step 3

    Add the scallions, mint, cucumber, carrots, tomatoes, parsley and carrots to the bulgur mixture. Toss all ingredients gently.

  4. Step 4

    Add the olive oil and stir.

  5. Step 5

    Add lemon juice, salt and pepper. Stir until mixed.

Tips & Warnings
  • Add salt and pepper to taste
  • You can add more tomatoes if you'd like
  • Add 1/4 teaspoon of allspice for an unusual flavor
  • Dress up its presentation by adding lettuce leaves and sliced lemons on the sides of your serving bowl
  • This is wonderful and healthy for everyone
  • Be careful when pouring the boiling water into the bulgur wheat. If it spills, it could easily burn you.
