How to Make a Greek Pasta Salad

Wowing your friends and family at a party or potluck is a snap with this easy, delicious recipe for Greek pasta salad. If you can boil water, you can make this salad.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 16-oz. package of fusilli or penne pasta
  • 2 medium tomatoes, diced
  • 1 medium red onion, sliced thin
  • 1 medium or large cucumber, sliced thin (peel can be left on or removed)
  • 1 cup of kalamata olives, sliced in half
  • 1 cup of feta cheese, crumbled
  • 4 tablespoons of olive oil
  • 1 tablespoon of red wine vinegar
  • 1 tablespoon of fresh oregano or ½ teaspoon dried
  • Water
  • Large mixing bowl
  • Cutting board
  • Knife
  • Large pot
  • Colander
  • Large spoon
  • Plastic wrap

Step1
Fill the pot about ¾ full with water and bring it to a boil. Add the pasta to the boiling water and cook according to the package directions.
Step2
Drain the cooked pasta in the colander, add it to the mixing bowl then add the olive oil and red wine vinegar while the pasta is still warm.
Step3
Dice the tomatoes and slice the onion, cucumber and olives, then add them all to the mixing bowl.
Step4
Chop the fresh oregano and add to the mixing bowl.
Step5
Crumble then add the feta cheese.
Step6
Stir all the ingredients together, cover with plastic wrap then place in the refrigerator to chill for at least one hour.

Tips & Warnings

  • Add other vegetables, such as artichoke hearts, lettuce or bell peppers for variety.
