How to Make 4F's Black Bean Soup

The four f's in this soup are fast, filling, fiberful and fantastic. A very easy soup to make it is brimming with vitamins and boasts 10g of fiber per serving. It makes a great quick diet lunch when consumed with a protein such as a boiled egg or a piece of string cheese. My 11 month old daughter loves it because the skin of the black beans are blended and it is easy eat. It also is a very versatile soup. Due to its thick consistency it can be turned into a bean dip with the addition of a few teaspoons of olive oil, red wine vinegar, hot sauce and cilantro.

Instructions

Things You'll Need:

  • 1 17 oz box Trader Joe Starter Tomato Sauce (really great flavor onions and garlic have already been added)
  • 1 14 oz can Goya Black beans ( you do not have to drain)
  • 1 medium sweet potato, peeled and diced
  1. Step 1

    Add tomato sauce, beans and sweet potato to a 2 quart sauce pan and bring to a boil over medium heat. Stir occasionally to prevent sticking.

  2. Step 2

    Cover and reduce heat to low. Stir occasionally.

  3. Step 3

    Simmer until the sweet potato pieces are tender. ( Depending on how big the pieces of sweet potato are it should take 30-45 minutes).

  4. Step 4

    Remove from heat and cool. Blend the soup in two batches until smooth.

Tips & Warnings
  • Makes 3 servings.
  • The soup could be topped with a few drops of hot sauce, teaspoon of low fat plain yogurt or sour cream, and sliced green onion tops.
  • Make sure soup is cool before you blend otherwise hot soup might splatter on you.
