Coming up with different menus for weekly dinners can be tough, and even harder if you don't eat meat or chicken! Being a "fishaterian" (a vegetarian who eats fish)offers more options than a usual vegetarian diet, and this spicy salmon patty is a quick, inexpensive and easy meal that anyone can make. It has become a family favorite and weekly staple in my household. Try it with the sweet potato fries recipe for a delicious weekday meal!

Instructions

Things You'll Need:

  • 2 cans of flaked salmon
  • 1 chipotle pepper- diced (buy a small can of chipotle peppers in the Mexican food aisle - use one, and freeze the rest for later)
  • 1/2 cup shredded cheddar cheese
  • 3 tbsp. Worcestershire sauce
  • Bread crumbs
  • Pepper
  • 1 egg

    Spicy Salmon Patties

  1. Step 1

    In a medium bowl combine the salmon, pepper, cheese, Worcestershire sauce, breadcrumbs and egg and pepper. Mix.

  2. Step 2

    Cover and refrigerate one hour for flavors to blend.

  3. Step 3

    Divide into equal patties and fry in a pan sprayed with oil.

  4. Step 4

    Serve on toasted buns with mustard.

Tips & Warnings
  • If calories aren't a concern for you, fry patties in olive oil for a crunchier patty.
  • Serve with sweet potatoes to finish off your meal.
