Things You'll Need:
- 1 package (4 servings) of pineapple gelatin
- 1 package of orange gelatin
- 1-1/2 cups of boiling water
- 1/2 cup of frozen nonalcoholic pina colada mix
- 1 can (20 oz.) of pineapple tidbits, drained and the juice reserved
- 1/2 cup of flaked coconut
- A medium bowl
- A mold pan (2 quarts)
- A mixing spoon
- Cooking spray

Step 1
In a medium bowl, dissolve the 2 packs of gelatin into the boiling water. Stir well.

Add the pina colada frozen concentrate and the pineapple juice and stir well.

Refrigerate the mixture for 45 to 60 minutes until slightly thickened.

Spray the 2 quart mold pan with the cooking spray.

Add the pineapple tidbits and the coconut flakes to the thickened gelatin (stir well.)

Step 6
Spoon the gelatin into the mold pan and refrigerate the mold for at least 4 hours or until firm.

Step 7
Remove the gelatin mold from the pan and serve.
