This is an easy dish to make for a weekend family brunch. Try it on a day when everyone wants to sleep in. It requires a short cooking time, and can even be prepared the day before and refrigerated. It's also a great dish to throw together for a mid-morning get-together.

Instructions

Things You'll Need:

  • 1 16-oz. bag of frozen hashbrowns, thawed
  • 2 cups of cooked, ground sausage
  • 2 cups of sharp cheddar cheese
  • 4 eggs, lightly beaten
  • 1 cup of half and half cream
  • 1 stick of margarine, melted
  • Salt and pepper to taste
  1. Step 1

Coat the bottom of a 13 X 9 inch casserole dish with cooking spray. Firmly press the thawed hashbrowns in the bottom of the dish. Drizzle with the melted margarine. Sprinkle with salt and pepper.

  2. Step 2

Sprinkle the ground sausage over the hashbrowns and top with the shredded cheese.

  3. Step 3

Mix together the eggs, half and half and more salt and pepper. Pour this mixture slowly over the entire casserole.

  4. Step 4

Bake in a 350-degree oven for 45 minutes or until puffy and golden on top. Serve and enjoy.

Tips & Warnings
  • To save time, assemble the casserole the night before, except for pouring over the cream and egg mixture. Mix up the cream and egg mixture and pour it over the top right before putting the dish in the oven.
  • This is a great meal served with hot buttered biscuits.
