How to Make a Sunshine Salad

Colorful, refreshing and delicious, this easy Jello side salad makes a great holiday dish or a daily treat. The pineapple and grated carrots provide an interesting texture, and making it is easy there is no reason not to try it.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 3 oz. lemon Jello
  • 1 cup water
  • 1 cup pineapple juice
  • 1 tablespoon vinegar
  • ½ teaspoon salt
  • 1 cup crushed pineapple drained
  • 1 cup grated carrots.

Step1
Peel and grate fresh carrots to fill one cup. It should be about 2 or 3 medium-sized carrots.
Step2
Drain pineapple juice from canned crushed pineapples. Put aside.
Step3
Mix lemon Jello mix, water, pineapple juice, vinegar and salt.
Step4
Add rest of the ingredients, mix well and chill till firm.

Tips & Warnings

  • Use packaged grated carrots to save time and effort.
  • If putting salad into a mold, be sure the salad is firm before attempting to remove it from the mold. It may take more time than plain Jello because of the pineapple juice.
