This is an easy dish to make for a weeknight meal when everyone is getting home late, and you need something ready when they walk in the door. Tender beef and vegetables in a hearty, creamy broth make this stew a delicious and wholesome comfort food. Serve the stew with biscuits or warm a crusty loaf of bread.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 lb. beef stew meat cut into bite-sized chunks
  • 1/4 cup of flour plus 3 tbs.
  • vegetable oil
  • 2 cans beef broth
  • 3 potatoes, peeled and cubed
  • 2 carrots, peeled and sliced
  • 1 small chopped onion
  • 2 celery stalks, chopped
  • 2 cloves of garlic, minced
  • Seasoning salt
  • 1 family-sized can of tomato soup
  • Slow Cooker
  1. Step 1

Season the beef with your favorite seasoning salt, or salt and pepper. Put the 1/4 cup of flour in a plastic seal-top bag, add the beef and shake to thoroughly coat.

  2. Step 2

Heat 3 tablespoons of vegetable oil in a skillet and brown the beef lightly on all sides.

  3. Step 3

Pour one can of the beef broth into a container or jar with a tight fitting lid. Put the 2 tablespoons of flour in the jar and shake well until the flour is well blended in the broth.

  4. Step 4

Put the beef, potatoes, carrots, celery, onion, and garlic in the slow cooker. Pour the flour mixture and the additional can of broth over the beef and vegetables. Pour in the can of tomato soup. Season with seasoning salt. Stir lightly.

  5. Step 5

Cover the slow cooker and cook on low for 8 to 9 hours.

Tips & Warnings
  • For quick preparation, have all the ingredients prepared and store them in a plastic freezer bag in the refrigerator the night before. Just pull out the bag and dump it into the slow cooker the next day.
