How to Use Liquids With Your Stovetop Smoker

You don't have to use liquid in your smoker, you can dry smoke without it, but if you're going to be cooking for a long time, adding liquid to the wood chips helps them smoke longer, and it adds another layer of flavor to your food.

Things You'll Need:

  • Beer, wine, water, or juice
  • Wood chips
  • Stovetop smoker
  1. Step 1

    Beer adds a great flavor to just about any food you smoke, and you can change the flavor by changing the type of beer you use (dark, amber, etc.) Just pour in a bottle to a layer of wood chips.

    Wine adds a wonderful flavor to fish and poultry. Use about 8 ounces of wine to a layer of wood chips.

    If you don't want the flavor, but still want the liquid, just use water.

    Juice can be a good choice for pork and poultry, too.

  2. Step 2

    Place the wood chips in the bottom of your smoker and add your liquid to the wood chips and let soak for a few minutes.

  3. Step 3

    Place the food in the smoker and heat up with the lid off.

  4. Step 4

    When the chips begin to smoke, close the lid and let the food cook.
