How to Eat Traditional Chinese Dim Sum

Chinese Dim Sum traditionally involves a dizzying array of small dishes of food passing by your dining table on steaming carts and overflowing trays, which can be quite intimidating for the uninitiated. But those willing to brave the learning curve will be richly rewarded. Among the tantalizing selection are dumplings filled with shrimp or pork, steamed buns with a variety of fillings, tiny spare ribs, fresh vegetables and other delicacies. Here’s how to get started.

Step1
Don’t be shy. When you see a cart or tray of food passing by that looks tempting, indicate to the waiter or waitress, with a polite nod or wave, that you are interested. Just because you want a closer look, doesn’t mean you’re obligated to purchase it. If you decide against the item, just tell the server, "No thank you."
Step2
Feel free to ask questions. Even though you may feel slightly out of place, Dim Sum restaurants are often accustomed to newcomers. Ask staff members what is inside a particular dumpling or bun, whether it’s spicy, or anything else that you would like to know. They are often more than happy to help.
Step3
Be adventurous. Each Dim Sum item is typically only a few dollars each. So buying and trying a variety of dishes the first time will not be a significant investment.
Step4
Ask for a menu if you're overwhelmed. Some restaurants list descriptions of their Dim Sum items in on a formal printed menu. If you prefer, you can select items this way and have them brought directly to your table.
Step5
If this type of dining still seems a bit much for you, opt for an updated version of Dim Sum. Some Dim Sum restaurants have done away with the cart and tray style of delivery, in favor of handing you a printed list of the food items, on which you simply check off what you’d like to order (very similar to ordering sushi.) This approach lacks some of the exotic bustle and appeal of traditional Dim Sum, but still allows you to indulge in its irresistible delicacies.
