This vegetarian mushroom stuffing is an easy yet flavorful recipe that is perfect for vegetarians craving meat. This stuffing can be a main course, side dish or stuffing for your tofu turkey.

Things You'll Need:

  • 4 onions
  • 6 tbs. olive oil
  • 4 tbs. butter
  • 4 cups coarsely chopped shiitake, oyster and crimini mushrooms
  • Salt and freshly ground black pepper
  • ½ cup dry white wine
  • 2 tbs. butter
  • 2 lbs. of ground soy burger
  • 1 bunch of fresh tarragon leaves

    How to Make Vegetarian Mushroom Stuffing

  1. Step 1

    In a large skillet, heat 2 tbs. of olive oil and 1 tbs. of butter.

  2. Step 2

    Add the onions and sauté over medium heat until they caramelize. This can take up to 15 minutes.

  3. Step 3

    In a separate skillet, heat 2 tbs. of olive oil and 3 tbs. of butter.

  4. Step 4

    In the second skillet, add the mushrooms and sauté over medium high heat until the mushrooms’ edges are crisp. This takes about 10 to 15 minutes.

  5. Step 5

    Season the mushrooms with salt and pepper then add the chopped tarragon leaves.

  6. Step 6

    Turn the heat up to high for the skillet with the mushrooms and add the wine. Let the wine cook off for a couple of minutes, lower the heat and simmer the mushrooms for another 10 minutes.

  7. Step 7

    Combine the caramelized onions and mushrooms in a large bowl.

  8. Step 8

    In the skillet used to cook the onions, add 2 tbs. of olive oil and the ground soy burger. Cook the ground soy for 5 to 7 minutes and break it into small pieces.

  9. Step 9

    Add the cooked ground soy burger to the onions and mushrooms. Stir well.

Tips & Warnings
  • White button mushrooms can be used as a substitute for more expensive mushrooms.
  • Yves Meatless Ground Round Original is a good ground soy burger.
