Things You'll Need:
- 4 onions
- 6 tbs. olive oil
- 4 tbs. butter
- 4 cups coarsely chopped shiitake, oyster and crimini mushrooms
- Salt and freshly ground black pepper
- ½ cup dry white wine
- 2 tbs. butter
- 2 lbs. of ground soy burger
- 1 bunch of fresh tarragon leaves

Step 1
In a large skillet, heat 2 tbs. of olive oil and 1 tbs. of butter.

Add the onions and sauté over medium heat until they caramelize. This can take up to 15 minutes.

In a separate skillet, heat 2 tbs. of olive oil and 3 tbs. of butter.

In the second skillet, add the mushrooms and sauté over medium high heat until the mushrooms’ edges are crisp. This takes about 10 to 15 minutes.

Season the mushrooms with salt and pepper then add the chopped tarragon leaves.

Turn the heat up to high for the skillet with the mushrooms and add the wine. Let the wine cook off for a couple of minutes, lower the heat and simmer the mushrooms for another 10 minutes.

Combine the caramelized onions and mushrooms in a large bowl.

In the skillet used to cook the onions, add 2 tbs. of olive oil and the ground soy burger. Cook the ground soy for 5 to 7 minutes and break it into small pieces.

Add the cooked ground soy burger to the onions and mushrooms. Stir well.
