Olive oil is healthier than other sources of fat because of its high content of monounsaturated fat (mainly oleic acid) and polyphenols. This is a moist, delicious and healthy cake, made with Olive oil.
Place all ingredients in the bowl and mix for 5 minutes.
Pour into a greased and sugared 8 inch cake pan and bake in a preheated 350 degrees oven for 25-30 minutes. Let cool in pan for 5 minutes on a wire rack. Remove from pan and continue cooling.
Delicious on it's own or with a fresh fruit compote.
