Brown-sugar walnut fudge, also called Penuche, is a rich melt-in-the-mouth sugar rush, followed by a craving for more! It beats chocolate fudge hands-down! It doesn't require any exotic ingredients and is really quick to make.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1/2 cup butter
  • 1 cup brown sugar - dark
  • 1/4 cup milk
  • 2 cups powdered sugar (confectioner's sugar)
  • 1 cup chopped walnuts
  • 8x8x2-inch pan
  1. Step 1

Melt 1/2 cup butter in a saucepan and add the brown sugar. Cook over a low heat until the sugar and butter have melted together, stirring constantly to keep the sugar from burning.

  2. Step 2

Add 1/4 cup milk and continue to stir until the mixture starts to come to a slow boil. Take it off the stove and let it cool for about five minutes.

  3. Step 3

Gradually add the powdered sugar about 1/2 cup at a time, stirring in between additions. Don't worry that the fudge looks lumpy; time and stirring will smooth it out. Continue to add powdered sugar and stir until the fudge starts to pull away from the sides of the saucepan. Add one cup of chopped walnuts and stir to blend them in.

  4. Step 4

Use non-stick spray or butter to lightly grease the 8x8x2-inch pan. Spread the fudge into the pan and gently flatten it. Let the fudge chill in the refrigerator for about two hours, then cut into squares with a sharp knife. This recipe makes about 36 pieces of candy.

  5. Step 5

    Variations on a Favorite:
    * You can easily double this recipe with great results
    * Try adding more nuts to change this into a nutty treat with a brown-sugar fudge center
*Use a cupcake pan and paper baking cups to create single servings. Look for silver foil baking cups to add a holiday look to the treat.
*Add Penuche to a holiday cookie basket and include the recipe - everyone always asks for it!

Tips & Warnings
  • Find paper baking cups in the baking and flour aisle of the market.
