How to Juice a Lemon

Fresh squeezed lemon juice beats the bottled stuff hands down. The bright flavors can perk up salad dressings, beverages and fish. Some lemons are hard, making them difficult to juice. Here’s how to get the most out of that sunny fruit.

Things You'll Need:

  • Lemon
  • Grater
  • Microwave
  • Strainer
  • Bowl
  • Fork or reamer
  • Spoon
  1. Step 1

    Remove the lemon zest, if it’s required in your recipe, before you cut into the lemon. Use a grater with small, shallow teeth. Take off just the yellow rind, not the bitter white pith beneath it.

  2. Step 2

    Press the whole lemon on the counter using the heel of your hand, or put the lemon in the microwave for a few seconds. Both techniques help break down the lemon’s interior structure so that juice will be released more easily.

  3. Step 3

    Place a fine strainer over a bowl to catch the seeds.

  4. Step 4

    Cut the lemon in half. Squeeze it over the strainer and bowl. Use a fork or a reamer to help extract the juice.

  5. Step 5

    Use the back of a spoon to press the contents of the strainer into the bowl. Pulp and some juice will be caught here, as well as seeds.

Tips & Warnings
  • If you have any cuts on your hands, wear gloves when working with lemons. The citric acid in the fruit will burn them. For the same reason, wash your hands before rubbing your eyes.
