How to Make Butternut Squash Ravioli

Butternut squash is a delicious and nutritious vegetable often seen on tables throughout the holidays. Its sweet, succulent flavor goes well with meats and most any other side dish. When paired with certain spices and cooked properly, it has an unforgettable flavor. Packed with vitamins, it's easily one of the best vegetables for you as well. Instructions

Things You'll Need:

  • One butternut squash
  • One teaspoon salt
  • Half teaspoon pepper
  • One package of wonton skins
  • One cup water
  • Baking sheet
  • Bowl
  • Pot with boiling water
  • Strainer
  • A few sprigs of parsely
  • 1/4 teaspoon nutmeg
  • 8 ounce container of ricotta cheese
  1. Step 1

    Preheat your oven to 375 degrees Fahrenheit. When it is fully heated, place a butternut squash on a baking sheet and slice small slits for ventilation in the squash. Place the squash in the oven and allow to cook for one hour or until it is soft.

  2. Step 2

    Allow the butternut squash to cool, as it will be very hot. When it is cool, slice open and scoop the squash into a bowl. Be sure to get all of the flesh out and not to waste any of the vegetable.

  3. Step 3

    Add one teaspoon of salt, half a teaspoon of pepper, a few sprigs of washed parsley leaves, and 1/4 teaspoon of nutmeg. Stir together until well blended.

  4. Step 4

    Open your container of ricotta cheese and scoop into the butternut squash mixture. Gently stir together until the entire mixture is a creamy, well-blended hue. In the meantime, put a medium-sized pot filled with water to a boil.

  5. Step 5

    Remove as many wonton skins from the package as you'd like to use. Using a spoon, gently scoop about a teaspoon of the butternut squash mix into the center of a wonton.

  6. Step 6

    Take your index finger and dip in the cup of water. Tracing a small outline or border around the whole four edges of the wonton wrapper, you'll essentially add the "glue" that will keep the wonton together.

  7. Step 7

    Gently take one edge of the wonton wrapper and fold up over the squash mixture and gently press into the matching sides of the wonton, forming a triangle. Make sure you gently press and seal all sides of the wonton to secure your ravioli.

  8. Step 8

    Once you have made an adequate number of wontons, gently drop in the boiling water and allow the ravioli to cook for three to five minutes. When they float to the top of the pot, they are finished.

  9. Step 9

    Gently strain or scoop up the cooked ravioli from the pot and enjoy with butter or your favorite pasta sauce.
