Things You'll Need:
- 1 pound of cod fillets
- 1/2 cup of lime juice
- 1 1/2 tablespoon of brown sugar
- 1/2 teaspoon of crushed red pepper
- 1 large red bell pepper cut into 1-inch pieces
- 1 1/2 cups of pineapple cut into 1-inch pieces
- 1 small purple onion cut into 1-inch pieces
- Small bowl
- Six 8-inch skewers
- Baking dish
- Grill

Step 1
Combine the lime juice, brown sugar and red pepper in a small bowl.

Thread the cod, red pepper, pineapple and onion evenly onto six skewers and place in a baking dish.

Drizzle the kebabs with the lime juice mixture.

Cover the kebabs and chill for 30 minutes.

Coat the grill rack with nonstick cooking spray and preheat to medium heat.

Grill the skewers for 5 to 7 minutes on each side. Make sure that while they are being grilled on each side, they are covered with the grill lid.
