My two favorite vegetables, spinach and mushrooms, make the best combination dish. Whether it's a side dish or an appetizer for a cocktail party, it's always a hit. Here's how to make it in minutes.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 pound of spinach
  • 1 teaspoon of minced garlic
  • 3 tablespoons of olive oil
  • 2 tablespoons of chopped onion
  • 1/2 pound of portobella mushrooms cut into 1/4 inch pieces
  • salt
  • pepper
  1. Step 1

Remove any stems or blemished leaves from the spinach.

  2. Step 2

    Rinse spinach and drain well.

  3. Step 3

Heat 2 tablespoons of oil with the onion.

  4. Step 4

Add mushrooms and cook by stirring over medium to high heat until brown.

  5. Step 5

Add the remaining tablespoon of oil and all the spinach to cook for about 1 minute.

  6. Step 6

Sprinkle with garlic, salt and pepper and cook for about 3-4 minutes.

Tips & Warnings
  • For extra flavor, add a few sprinkles of nutmeg.

on 2/25/2008 Great spinach recipe ! This should get even the most vegatable-hating kid to at least TRY to like his or her veggies. One small suggestion : try melting a slice of cheese on each portion first.
