We all scream ice cream, some of us more than others, but what do you do when the freezer is bare and your favorite show is on? Imagine, delicious blueberry ice cream from the freezer to your spoon in just three minutes. Now that’s fast.

From Quick Guide: Ice Cream Delights
Difficulty: Easy
Instructions

Things You'll Need:

  • 2 cups heavy raw cream
  • 2 cup frozen blueberries
  • 2 large fresh strawberries
  • 4 tablespoons of honey or maple syrup
  • Food processor
  1. Step 1

Make sure the blueberries are frozen ahead of time. Store bought frozen berries are fine, but fresh frozen berries from your freezer are best. Buy or pick them in season and you will have the best blueberry ice cream possible.

  2. Step 2

Pour the cream into your food processor. Raw cream is smoother, but if you can’t get it, regular heavy cream works well too.

  3. Step 3

Add a half-cup of blueberries and process until the mixture is smooth and creamy.

  4. Step 4

Add two tablespoons of honey or syrup. You can substitute sugar if you like, but the flavor of natural sweeteners really goes well with this recipe.

  5. Step 5

Add another half cup of the blueberries and process until smooth.

  6. Step 6

Add two tablespoons of blueberries ff the ice cream is not thick enough for you, then process. Also check the mixture for sweetness and add another tablespoon of honey or syrup if necessary.

  7. Step 7

Repeat step 6 until the desired consistency and taste have been achieved.

  8. Step 8

Spoon out some of the ice cream into a dish. Add fresh strawberries on top. Now stand back and admire what you’ve created. Making blueberry ice cream is fast and easy.

Tips & Warnings
  • Store any uneaten ice cream in the freezer.
  • To thaw cream that has been in the freezer, set it out on the counter about 20 minutes before eating.
  • Try leaving out the sweetener and just enjoy your treat with the natural sugar in the cream and the fructose in the berries.
  • This is such an easy dish to make that your kids can learn to make it themselves, or they can just make more for you. That’s even better.
  • The berries must be frozen, or the ice cream will not thicken properly.
  • If you’re using raw cream, be sure to only use cream from a known and trusted source, like a neighbor farmer or a trusted store brand.
