How to Make a Tortellini Salad

In the midsts of health crazes, burgers and hot dogs are being replaced at picnics in favor of healthier, less filling substitutes. Tortellini salad is great side dish to bring to any picnic or party. It is not that hard to make and you are always guaranteed to go home with any empty bowl.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 (4 oz.) Jar of Mushrooms
  • ½ cup of Balsamic Vinegar
  • ¼ cup of Olive Oil
  • ¼ tsp. of Crushed Red Pepper
  • 1 Clove of Minced Garlic
  • ¼ cup of Minced Onion
  • 1 tsp. of Oregano
  • 1 (16 oz) Bag of Frozen Tortellini(Meat or Cheese)

    How to Make a Tortellini Salad

  1. Step 1

    Mix together the vinegar, olive oil, red pepper, minced garlic, minced onion, and oregano.

  2. Step 2

    Pour the mixture over the mushrooms and refrigerate it for 2 to 3 days.

  3. Step 3

    Two hours before planning to serve, cook the tortellini as directed on the package.

  4. Step 4

    When it's done cooking, put the tortellini in a big bowl.

  5. Step 5

    Pour the marinade over the tortellini and just slightly mix it all together.

  6. Step 6

    Server the tortellini at room temperature and refrigerate left overs.

Tips & Warnings
  • Boxed tortellini can also be used. Just make sure that it's 16 ounces.
  • Either meat or cheese tortellini can be used depending on personal preference.
  • After mixing the tortellini and the marinade, it can be garnished with fresh parsley. This is optional.
