Fish sandwiches make for fast, nutritious meals when you're too tired or busy to spend hours in the kitchen. You'll be chewing on one of these sandwiches less than 15 minutes after you start making them.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 1 lb. fish fillets
  • 1 tbsp. lemon or lime juice
  • 1 tsp. lemon pepper seasoning
  • 1/2 cup mayonnaise
  • 4 tsp. Dijon mustard
  • 1 tsp. honey
  • 4 hamburger buns or bulky rolls
  • 4 large leaves of lettuce
  • 1 tomato
  • 3 tbsp. extra virgin olive oil
  • Paper towel
  • Small brush
  • Frying pan
  • Toaster

Step1
Rinse the fish. This recipe can be used with virtually any type of fish that can be sliced into thin pieces about ½-inch thick. Dry the fish by patting it with a paper towel.
Step2
Brush the fish fillets with lemon juice using a small brush or a paper towel slightly dampened with the juice. Sprinkle the fillets with the lemon pepper seasoning, applying it evenly on both sides of the fillet.
Step3
Make a spread for your fish sandwiches by mixing together the mayonnaise and Dijon mustard in a small bowl. Cover the bowl and place it in the refrigerator until the fish sandwiches are ready to eat.
Step4
Place the fish fillets in a frying pan lightly greased with extra virgin olive oil. Cook over medium heat until the fish begins to flake when touched with a fork. The fish fillet should only take about 5 minutes to cook on each side, depending on the thickness of the fish.
Step5
Split and toast the rolls or buns. Remove the fish from the pan and place each fillet on the bottom of one of the buns. Apply the spread to the top of each bun.
Step6
Top each sandwich with a large leaf of lettuce and a slice of tomato. Customize the recipe as much as you like. Some people like to use a creamy salad dressing instead of mayonnaise in the spread.

Tips & Warnings

  • Use Jamaican jerk seasoning or Cajun seasoning as an alternative to lemon-pepper seasoning to make a spicier version of fish sandwiches.
