How to Make Chremslach for Passover
Chremslach is a traditional pancake served during Passover. Matzo meal is used in place of flour. Cremslach can be a light supper meal served with butter and vegetables or as a breakfast dish with fruit and cinnamon sugar.

- Large frying pan
- Oil
- 2 eggs
- 1 tsp. salt
- 2/3 cup warm water
- 3/4 cup matzo meal
- Sugar
- Cinnamon
- Mixing bowl
- Ladle or ice cream scoop
- Spatula
- Paper towels

Beat the eggs with the salt and 2-3 tbsp. of water until the mixture is quite thick.

Add the matzo meal and 1 tsp. sugar to the egg mixture. Add water gradually to loosen up the batter a little bit. Test the batter by dropping it off a spoon. If batter runs off quickly, there is too much water and more matzo meal can be added.

Pour about 1/4 cup of vegetable, canola or olive oil into a frying pan. Heat the pan on medium-high or 375 degrees F until the oil begins to pop.

Use a ladle or ice cream scoop, depending on the size pancake you want to make, to drop the chremslach into the frying pan.

Cook the first side of the pancake for a few minutes until golden-brown. The exact time will vary according to each person's stove. Flip the pancake over with a spatula so the other side can cook.

Drain the Passover pancakes on a plate you have lined with paper towels. Serve them immediately after draining, while they are still hot.

Mix together 1 tsp. of ground cinnamon and 1/4 cup of sugar. Sprinkle over the hot chremslach.

Try adding dried apricots, raisins and a selection of nuts to the chremslach batter for a heartier variation of the pancake. Experiment with other kosher-for-Passover ingredients to make unique chremslach.

Tips & Warnings
Experiment with your cooking method to reduce the fat content of chremslach. Though most recipes call for frying the pancakes in oil, try using cooking spray in your frying pan. Grease a cookie sheet and make chremslach in the oven for an even lower-fat version of this traditional Passover treat.
Be very careful when cooking chremslach with children, as the oil can spatter when it gets very hot. Younger members of the family might want to help prepare the batter and garnish the pancakes with sugar while the adults do the frying.
