While corned beef and cabbage isn't a traditional Irish dish, it is a very popular item served at St. Patrick's Day parties. If you take a little time to whip up this dish for dinner, you will surely have a crowd of people clamoring for seconds.

Difficulty: Easy
Instructions

Things You'll Need:

  • 3 lbs. corned beef brisket
  • 10 small red potatoes
  • 5 carrots
  • 1 large head of cabbage
  • Brisket spice packet
  • Dutch oven or a large pot
  1. Step 1

Prepare your ingredients for the recipe. The carrots should be peeled and julianned and the cabbage should be cut into 1 1/3 inch wedges.

  2. Step 2

Put the corned beef in a pot or Dutch oven and cover it with water. After adding the spice packet to the beef, cover the pot and boil the water. Reduce the heat to a simmer for 50 minutes per pound of beef.

  3. Step 3

Add the potatoes and carrots. Cook them until they are almost tender. Pour in the cabbage and cook for an additional 15 minutes.

  4. Step 4

Put the meat into its own bowl and let it cool for 15 minutes. If you want a juicier corned beef dish, drizzle some of the savory water on top and cover it with plastic wrap.

  5. Step 5

Put the vegetables in a bowl. Pour the broth onto the vegetables to add flavor. Slice the beef and place it on top of the vegetables.

Tips & Warnings
  • Consider replacing the water in the recipe with beer if you're of age. Beer can make the corned beef even more tender, and will provide a delicious sauce for your St. Patrick's Day dish.
  • Make this recipe a day before St. Patrick's Day for a savory feast. The corned beef gets better as it marinates in its own juices in your refrigerator.
  • If your brisket doesn't come with a spice packet, you can make a substitute. Try making any combination of bay leaves, peppercorns, garlic and steak seasoning to spice your dinner.
  • This recipe can be made in a slow cooker. Follow your manufacturer's directions for cooking meat in your unit so that your corned beef doesn't get dry.
  • Do not season your beef. This recipe can be salty naturally, so adding any spice with salt will throw off the taste balance.
  • Do not omit the potatoes from this recipe. They soak up the extra salt from the spice packet. If you are allergic to potatoes, consider substituting them for yams or another hardy vegetable.
