How to Make Amaretto Fudge

Rich chocolate fudge flavored with a hint of almond liqueur--what could be better? How about knowing that this fudge is low in fat, and that each delicious piece packs only 50 calories? Bear in mind the healthy, antioxidant, and even anti-depressive qualities of chocolate as well, and this is one dessert you can really feel good about--provided you can keep from scarfing the whole pan at one sitting, of course!

Things You'll Need:

  • 1 1/2 cups semi-sweet chocolate chips
  • 1 1/2 cups milk chocolate chips
  • 1 cup fat-free sweetened condensed (not evaporated) skimmed milk
  • 1/4 cup Amaretto (or other almond-flavored liqueur)
  • Sliced almonds for decoration
  • Microwave-safe bowl or double boiler
  • 8- or 9-inch square pan
  • Aluminum foil
  1. Step 1

    Line the pan with foil. Be sure to leave an overlap of an inch or so of foil on each side of the pan.

  2. Step 2

    Mix the two kinds of chocolate chips, condensed milk and Amaretto in a microwave-safe bowl or on top of a double boiler over boiling water. Heat for a minute or so (longer if using double boiler), then stir well. Heat for another minute or until completely melted, stirring frequently until smooth.

  3. Step 3

    Spread evenly in the foil-lined pan. While still soft, use a sharp knife to mark off 36 squares (6 rows of 6 pieces) and top each piece with a slice of almond. Chill in refrigerator for a few hours (2 or more) until firm.

  4. Step 4

    Remove from pan by lifting foil up, then transferring fudge to a cutting board. Carefully peel off the foil, then turn the fudge slab over until the almond sides are up. Use a sharp knife to separate each piece.

Tips & Warnings
  • You can substitute rum, Irish Cream, hazelnut liqueur, raspberry liqueur, coffee liqueur, orange liqueur or almost any type of liqueur for the Amaretto, or even cold coffee if you prefer an alcohol-free version.
  • If you use orange liqueur you may garnish with candied orange peel instead of almonds; you could use whole coffee beans if you make coffee-flavored fudge.
