Things You'll Need
- blender
- 1 ½ pounds broccoli, flowerets and stems
- 5 cups chicken broth
- ¼ cup butter
- 2 Tbsp chopped onion
- 3 celery ribs, chopped
- ¼ cup flour
- 2 cups heavy cream or half and half, scalded
- ¼ tsp nutmeg
- salt
- paprika
- Parmesan cheese

The first step in making broccoli soup is to cut the broccoli flowerets off the stems.

The second step in making broccoli soup is to peel and chop the broccoli stems.

Then, cook stems in stock for 30 minutes.

Remove stems and put in blender with 1 cup stock puree.

Put flowerets in remaining stock and cook 5 to 7 minutes.

Saute onion and celery in melted butter for 5 minutes.

Stir in flour and cook for 3 to 4 minutes.

Slowly stir in stock and bring to boiling. Add puree. Bring to boil.

Add cream. Bring to boiling. Add salt, nutmeg, and paprika to taste.

Serve your broccoli soup with a dusting of Parmesan.
