Broccoli Mandarin Salad makes a great side dish or appetizer. This broccoli mandarin salad recipe is quick and easy to prepare. If you like salads with broccoli and also enjoy the flavor of mandarin oranges, you will love this recipe for broccoli mandarin salad.

Instructions

Things You'll Need:

  • non-aluminum saucepan
  • wire whisk
  • 1 large egg
  • 1 egg yolk
  • ½ cup sugar
  • 1 ½ teaspoons cornstarch
  • 1 teaspoon dry mustard
  • ¼ cup tarragon wine vinegar
  • ¼ cup water
  • ½ cup mayonnaise
  • 3 tablespoons butter, softened
  • 4 cups fresh broccoli flowerets
  • 2 cups sliced fresh mushrooms
  • 1 small sweet onion, sliced (Vidalia, Maui, or Texas Sweet)
  • 1 (11 oz ) can mandarin oranges, drained
  • 6 to 8 slices bacon, cooked and crumbled
  • ½ cup raisins
  • ½ cup slivered almonds
  1. Step 1

    The first step in making broccoli mandarin salad is to combine the egg, egg yolk, sugar, cornstarch, and dry mustard in a non-aluminum saucepan.

  2. Step 2

    The next step to making broccoli mandarin salad is to gradually add vinegar and water, stirring constantly with a wire whisk.

  3. Step 3

    Then, cook over medium heat, stirring constantly, 5 minutes or until mixture thickens.

  4. Step 4

    After that, remove from heat; stir in mayonnaise and butter. Cover dressing, and chill.

  5. Step 5

    Combine broccoli and remaining ingredients; add dressing, tossing to coat. Serve immediately.
