Things You'll Need:
- 1 cup raw spinach
- 1 3oz. slice low fat silken tofu
- 1 egg white
- 1 Tbsp. crumbled feta cheese
- 1 whole wheat pita pocket
- 1 Tbsp. salsa
- 1 medium orange, sliced (optional)
- olive oil cooking spray
- medium skillet

Step 1
Cut the tofu into cubes and set aside.

Spray a skillet with olice oil cooking spray. Warm the skillet on the stove but don't burn the cooking spray.

Put spinach into the skillet and cook until tender.

Add tofu cubes, egg white and feta cheese. Cook until egg white is set.

Warm pita bread in the microwave and cut in half.

Fill halves with egg mixture. Put salsa of your choice on each half and serve.

Slice orange and serve that alongside the pita Power Bursts.
