How to Make a Breakfast Power Burst

Are you going low fat and trying to eat healthy, but feeling as if you are powering down? Here is some fuel for your health engine that will keep you going from breakfast to lunch without a pang of hunger. A Breakfast Power Burst gets you going without high fats, oil or carbohydrates. If you are on an exchange list, the entire breakfast is only 2 starches, 1 fruit and 1 meat (lean). If made as shown here, it only has 262 calories. So power up your breakfast and go.

Instructions

Things You'll Need:

  • 1 cup raw spinach
  • 1 3oz. slice low fat silken tofu
  • 1 egg white
  • 1 Tbsp. crumbled feta cheese
  • 1 whole wheat pita pocket
  • 1 Tbsp. salsa
  • 1 medium orange, sliced (optional)
  • olive oil cooking spray
  • medium skillet
  1. Step 1

    Cut the tofu into cubes and set aside.

  2. Step 2

    Spray a skillet with olice oil cooking spray. Warm the skillet on the stove but don't burn the cooking spray.

  3. Step 3

    Put spinach into the skillet and cook until tender.

  4. Step 4

    Add tofu cubes, egg white and feta cheese. Cook until egg white is set.

  5. Step 5

    Warm pita bread in the microwave and cut in half.

  6. Step 6

    Fill halves with egg mixture. Put salsa of your choice on each half and serve.

  7. Step 7

    Slice orange and serve that alongside the pita Power Bursts.

Tips & Warnings
  • If you don't like whole oranges, drink a 4-ounce serving of orange or tomato juice instead.
  • If you are in a hurry, this is one meal you can eat on the go as long as you wear a dish drying cloth (try it, it's wonderful) over your clothes like a bib.
