There's nothing tricky or mysterious about poaching eggs. Poached eggs can be cooked the same way you fry eggs over easy. Just use water instead of oil.

From Quick Guide: Incredible Eggs
Difficulty: Easy
Instructions

Things You'll Need:

  • Large frying pan
  • Fresh eggs
  • Water
  • 1/2 tsp. salt (optional)
  • Spatula
  1. Step 1

Cover bottom of frying pan with about 3/4-inch of water and bring to a rapid boil. Add 1/2 tsp. of salt (optional).

  2. Step 2

Reduce heat to medium high. Break one to three eggs directly into the water.

  3. Step 3

Allow eggs to cook on bottom sides for 1 1/2 to 2 minutes. Gently turn over each egg with a spatula.

  4. Step 4

Allow eggs to cook on sunny sides for 1 1/2 to 2 minutes.

  5. Step 5

Remove poached eggs gently from pan with spatula and place them on a plate covered with paper towels. Pat the tops of the eggs dry with paper towels. Serve as you would eggs over easy.

Tips & Warnings
  • You don't need to cover eggs with water, because you will be turning them over.
  • A spatula with flanged sides is easier to manipulate.
