How to Make Raspberry Salmon over Wild Rice

Summer or winter, salmon is a wonderful dinner. This recipe will make you renew your love affair with the fish and exceed any other salmon recipe.

Things You’ll Need:

  • Wild rice (packaged)
  • Olive oil
  • cracked pepper
  • 3-4 pounds salmon
  • Raspberry preserves
  • White vinegar
  • Fresh raspberries (for garnish)

How to Make Rasberry Salmon over Wild Rice

Step1
Prepare the wild rice as directed on the package.
Step2
Drizzle olive oil and cracked pepper over the salmon.
Step3
Grill the salmon for three minutes on each side and remove from the grill.
Step4
Mix equal parts raspberry preserves and white vinegar over the stove. Make sure to heat this mixture completely.
Step5
Place wild rice on dish. Put the salmon over the rice and drizzle it with the raspberry mixture.
Step6
Place in the microwave for 2-3 minutes, making sure the rice mixture and salmon is heated.
Step7
Serve garnished with fresh raspberries.

Tips & Warnings

  • If you are going through the expense of buying salmon, don't buy a generic rice mixture as it doesn't work as well. Use a name brand wild rice mix.
  • Two of the best vegetables to serve with this dish are asparagus or Brussels sprouts, as the bitterness in these vegetables compliments the sweetness of the raspberry sauce.
  • Salmon's best flavors are captured in a grill. During winter months, try using an indoor grill.
  • A lemon cut up, squeezed and placed in a bowl on a counter should help with any residual fish smell.
