This shrimp meal is quick and healthy for the whole family. This can be made and on the table in half an hour. I developed this to encourage everyone in my family to eat more shrimp and vegetables. This recipe fits really well into the Mediterranean diet, if you are using the diet to lose weight.

Instructions

Things You'll Need:

  • Olive oil
  • 2 cups of frozen shrimp, tail off
  • 1 1/2 cup of carrots sticks
  • 3 garlic cloves, chopped
  • 1 can (15 oz.) black beans, rinsed
  • 2 cups of grape tomatoes, cut in half
  • 1 cup frozen corn
  • 1/4 cup of White wine
  • 2 tbsp. of Cajun seasoning
  • Salt and pepper, to your taste
  • 2 cups of spinach, sliced
  1. Step 1

    In a skillet put 3 to 4 tbsp. of olive oil, and add the shrimp.

  2. Step 2

    Add the carrot sticks. By using these precut carrots this goes together just a little quicker on those very busy nights.

  3. Step 3

    Add the chopped garlic, black beans, frozen corn and cut grape tomatoes.

  4. Step 4

    Mix together in the skillet, and pour onto the white wine. Add the Cajun seasoning, salt and pepper to your taste.

  5. Step 5

    Just a few minutes before you are going to serve the dish, add the spinach. Put the top of the skillet on so the spinach warms and turns a wonderful deep green color.

Tips & Warnings
  • This recipe was written using precooked, frozen shrimp, but fresh could be used.
  • This dish cooks quickly, therefore you will want to keep close watch on it.
