Moroccan Chicken with Olives is just as simple to create as any baked chicken. The first time I made this recipe, I was amazed at the results. It tastes as close to perfection as one could ever get.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • 1/4 cup chopped parsley
  • 1 tbsp. paprika
  • 1/2 tsp. salt
  • 1/2 tsp. ginger
  • 1/2 tsp. turmeric
  • 3 cloves garlic, chopped
  • 1 large broiler chicken
  • 1/2 cup flour
  • 1/2 cup water
  • 1/3 cup lemon juice
  • 1 cube of chicken bouillon
  • 1 cup Greek olives
  • 1 sliced lemon
  • Cooked couscous
  • Small bowl
  • Roasting pan
  • Aluminum foil

Step1
Stir together all dry ingredients in a small bowl. Add garlic and toss. Rub the outside of the chicken with the dry rub. Let the chicken marinate in the rub for 10 minutes uncovered.
Step2
After the 10 minutes, place the chicken in the broiler pan and add the rest of the ingredients (aside from the olives). Cover the chicken with aluminum foil.
Step3
Bake the chicken in a 350 degree F oven for one hour. Remove the foil, add the Greek olives and bake for another 15 minutes.
Step4
Remove the chicken from the oven and let sit for 10 minutes before slicing. Slice the chicken and serve over the couscous.

Tips & Warnings

  • Feel free to de-glaze the roasting pan with some white wine for a simple sauce.
  • Always cook chicken until well done.
