Pork fried rice is a fantastic Asian treat. When you add a little mango, this old favorite is brought back to life. Read on to learn more.

Instructions

Things You'll Need:

  • 2 cups cooked pork, cubed
  • 1 mango, cubed
  • 1 small can water chestnuts
  • 3 cups cooked rice, cold
  • 1/2 cup frozen peas, thawed
  • 2 eggs, beaten
  • 3 tbsp. soy sauce
  • 1 tsp. cornstarch
  • 3 tbsp. oil
  • 1 tbsp. oil
  • Wok
  1. Step 1

    Coat the pork with the cornstarch. Heat the wok over high heat and add 1 1/2 tbsp. of oil. Fry the pork, mango and water chestnuts until hot.

  2. Step 2

    Remove the pork mixture and add 1 1/2 tbsp. of oil. Place the rice, peas and soy sauce in the wok and fry for 2 minutes. Add the pork mixture back into the rice.

  3. Step 3

    Move the food onto the sides of the wok. In the middle of the wok, add the remaining 1 tbsp. of oil and scramble the eggs in the middle of the wok. Once the eggs are done cooking, mix all ingredients together and serve.

Tips & Warnings
  • Feel free to substitute the pork for other meats.
