Jamaican food is a creative way to spice up nightly dinner menus. This recipe is much easier to prepare than the titles evokes. Read on to learn how.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 4 large boneless, skinless chicken breasts
  • 1 can frozen orange juice
  • 1 plantain, chopped into cubes
  • Salt and pepper
  • Lime juice
  • 1 bay leaf
  • Chopped hazelnuts
  • 4 tbsp. butter
  • Frying Pan

Step1
Melt butter over medium heat in the frying pan and brown chicken on all sides. Add the frozen orange juice and one can of water to the pan.
Step2
Add the salt, pepper and bay leaf and plantain to the pan and simmer for 25 minutes. Stir in the lime juice during the last 5 minutes of cooking.
Step3
Serve the chicken and plantains on a bed of rice. Top with the remaining pan liquid and the chopped hazelnuts.

Tips & Warnings

  • Try using fish instead of chicken.
  • When using fish, the cooking time is reduced by half.
  • Always cook chicken to the well-done stage.
