Things You'll Need:
- 9 ounces (~250 grams) of hazelnuts.
- 9 ounces (~250 grams) of almonds.
- 10 ounces (~300 grams) of brown sugar.
- 3 egg whites.
- Unbleached Baking Paper.

Step 1
Finely grind the hazelnuts and almonds in the food processor.

Whip the egg whites to a firm thick foam in a bowl.

Add the nuts to the egg whites and the sugar. Mix thoroughly.

Preheat oven to 350 degrees (~180 Celsius).

Lay the baking paper sheet in a flat oven tray.

Scoop the mix onto the tray to create balls of about 2 inches diameter. Leave about one inch space between cookies.

Bake for 10 to 15 minutes, until the cookies tan to a bronze color.
