Instructions

Things You'll Need:

  • 1 and 1/2 cups soft coconut macaroon crumbs
  • 2 tablespoons melted butter
  • 1/2 cup of granulated sugar
  • 1/2 teaspoon grated lemon peel
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 2 eggs
  • 16 oz. cream cheese, softened to room temperature
  1. Step 1

    Preheat the oven to 350 degrees. Mix the macaroon crumbs with the melted butter until evenly coated. Press the mixture firmly onto the bottom of a greased 8 inch square baking pan.

  2. Step 2

    Using an electric beater, thoroughly blend the cream cheese, sugar, lemon peel, juice and vanilla. Gradually add eggs one at a time until mixture is consistent. Pour over the crust.

  3. Step 3

    Bake in the oven for 20 - 25 minutes. The center will appear to be almost set but not fully firm. Cool on a rack and refrigerate at least 4 hours before serving. Makes 16 bars; store leftovers in the refrigerator.
