Give yourself the freedom and space to create a unique salad by taking advantage of the infinite number of ingredients available...and discover the variation of salad that will make your eyes roll to the back of your head...here is one to try. It is so delicious it is almost a crime!

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 2 cups Apricots
  • 2 cups Chicken
  • 1 cup Cucumber
  • 1 cup Bean Sprouts
  • 1/4 cup Rice Vinegar
  • 1 tablespoon Chopped Cilantro
  • 2 teaspoons of Sugar
  • 1/4 cup Vegetable Oil
  • 1/2 teaspoon Chili Oil
  • Salad Greens
  • 2 tablespoons Chopped Peanuts

How to Make fresh Apricot Thai Salad

Step1
Mix first 3 ingredients (apricots, chicken and cucumbers)
Step2
Mix in oils (chili and vegetable) and sugar
Step3
Toss in salad greens and add vinegar.
Step4
Top with cilantro, peanuts and bean sprouts

Tips & Warnings

  • make sure chicken is boiled and soft, cut in thin strips or pieces
  • make sure apricots are ripe but firm
  • refrigerate for 1-2 days only
