Click on Notes on the Navigation pane. Or use the down arrow by the New menu, scroll down to Note. This will create a new note. If you prefer keyboard shortcuts you can use CTRL+SHIFT+N.
Step2
Type in your new information for this note. Then close this note. Once your note is created and closed you can change the color of this note.
Step3
Right click on the closed not and select the arrow by Color. You will see a choice of blue, green, pink, yellow or white.
Step4
You can take advantage of color coding your emails, calendar items and notes in an organized fashion. I have used notes for important work links, just like a bookmark to a webpage for example. I have seen people in accounting use notes to organize charge numbers they have to provide people over and over. You can also attach a note to an email to share the information.
Tips & Warnings
Use color coding consistently.
Type the name of the note first. That is the text you will see when the notes are closed.
Forward notes as a way of giving out information you give repeatedly. You should only have to type information one time.

I am very new to Outlook but am now required by my current employer to use it. Im getting an idea to start color coding messages by importance. For example, red could be urgent??? Thanks for teaching me how.
