The best pork steaks are cut from a pork tenderloin. Purchasing a full loin and cutting the steaks yourself will give you the best value, but you can have the butcher at the grocers cut the loin the way you want it.

Difficulty: Easy
Instructions

Things You'll Need:

  • 4 Loin steaks 1" thick
  • 1/4 pound bacon or
  • 2 Tbps. olive oil
  • Seasonings
  • Water
  • Large, heavy skillet with lid
  1. Step 1

Lay the pork steaks on a platter and season on one side. Use any combination of seasonings you desire.

  2. Step 2

Fry bacon in a heavy skillet until crisp. Remove to drain on paper toweling. If desired, olive oil can be substituted, but doesn't give the pork the same taste.

  3. Step 3

Use tongs to lay the pork steaks, seasoned side down, in the hot grease. Season the uncoated top side of the steaks.

  4. Step 4

Sear on both sides until golden brown.

  5. Step 5

Pour water into the skillet even with the top of the pork steaks. Bring to a boil and cover with a tight fitting lid. Reduce the heat to simmer.

  6. Step 6

Simmer the pork steaks for at least an hour or until thoroughly cooked. Remove from skillet and serve with your choice of sides.

Tips & Warnings
  • Eat the fried bacon while the steaks or cooking or crumble it and serve it on a salad or with baked potatoes.
  • Cooking pork steaks this way guarantees a juicy steak every time.
  • Almost any type of meat that tends to dry as it cooks can be cooked this way.
  • Experiment with different seasonings or mix and match your favorites. Leave the salt off, the meat doesn't need it and neither do you.
