Preheat a skillet or griddle skillet on medium heat.

Slowly add hot water to the cornmeal. The batter should be thick, but not too thick that you can’t shape it into patties. When the batter sits, it will stiffen and you will need to add more water.

Add oil to skillet for frying. Take large spoonfuls of the batter and put them onto the skillet. Use the spoon to shape the batter into patties.
Step6
Fry each side of the bread to the desired crispiness.
Tips & Warnings
After each batch of bread, you will probably need to add more hot water to your batter.
The hot water cooks the cornmeal, so re-boil your water if it cools down too much while you’re frying bread.

I've eaten Hot Water Cornbread as a child and your recipe is the first to come close to what I've eaten the only thing that's different is the onions. That even sounds good!
