How to Make Texas-Style Fruitcake

People who make jokes about fruitcake have obviously not tried this one.

Instructions

Things You'll Need:

  • 2 ounces red candied cherries
  • 2 ounces green candied cherries
  • 1 pound dates
  • 4 ounces candied pineapple
  • 3 cups pecan halves
  • 1 cup flour
  • 1 cup sugar
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 3 eggs
  • 1 teaspoon vanilla
  • ¼ cup Oloroso sherry
  1. Step 1

    Pit the dates, then cut into rough chunks. Beat eggs

  2. Step 2

    Mix the pecans and fruit.

  3. Step 3

    Stir in sugar, flour, salt and baking powder.

  4. Step 4

    Introduce eggs and vanilla to the mixture.

  5. Step 5

    Line a 9 x 5 inch pan with aluminum foil and spread the mixture inside.

  6. Step 6

    Bake for one hour and 45 minutes at 300 degrees.

  7. Step 7

    Wrap in aluminum foil after cooking.
