How to Make Peggy's Lemon Bars

Here's a quick and pleasing dessert.

Instructions

Things You'll Need:

  • 2 1/4 cups flour
  • 1 cup butter
  • 1/2 cup powdered sugar
  • 4 eggs, beaten
  • 2 cups sugar
  • 1/2 cup lemon juice
  • 1/2 tsp. baking powder
  1. Step 1

    Mix 2 cups flour, butter and powdered sugar and press into a long glass dish.

  2. Step 2

    Bring the crust up on the sides.

  3. Step 3

    Bake for 20 minutes at 350 degrees F.

  4. Step 4

    Mix eggs, sugar, lemon juice, 1/4 cup flour and baking powder.

  5. Step 5

    Pour into crust. Do not put the filling above the level of the crust.

  6. Step 6

    Bake another 25 minutes.

  7. Step 7

    Let cool well, then sift powdered sugar over the top.

on 10/17/2009 ok, i have to try this one soon. thanks for easy lemon bars. i'm a chocolate person except for lemon bars. did you know you can fit 8 lemon bars into the togo desert container at Home Town Buffet? plan on using fork or spoon, not fingers. thanks
