How to Make Peggy's Lemon Bars

  • 2 1/4 cups flour
  • 1 cup butter
  • 1/2 cup powdered sugar
  • 4 eggs, beaten
  • 2 cups sugar
  • 1/2 cup lemon juice
  • 1/2 tsp. baking powder

Instructions

    • 1

      Mix 2 cups flour, butter and powdered sugar and press into a long glass dish.

      Bring the crust up on the sides.

      Bake for 20 minutes at 350 degrees F.

      Mix eggs, sugar, lemon juice, 1/4 cup flour and baking powder.

      Pour into crust. Do not put the filling above the level of the crust.

      Bake another 25 minutes.

      Let cool well, then sift powdered sugar over the top.
