Instructions

Things You'll Need:

  • 2 large tomatoes
  • 3 eggs
  • 2 tablespoons butter
  • 1 teaspoon flour
  • freshly-ground pepper
  • kosher salt
  • parsley
  • red beefsteak tomatoes, sliced
  1. Step 1

    Grind the pepper. Peel the 2 large tomatoes and chop finely. Add pepper and salt, then sprinkle on some flour.

  2. Step 2

    Stir and mash this mixture until there are no lumps remaining.

  3. Step 3

    Melt 1 tablespoon of butter and add this to the mixture.

  4. Step 4

    Mix eggs separately, then together, then add the tomato mixture and mix.

  5. Step 5

    Melt 1 tablespoon of butter in a frying pan.

  6. Step 6

    Pour in omelet mixture.

  7. Step 7

    When the omelet is brown, raise pan off the heat, tilt at a 45 degree angle and fold one side of omelet over the other.

  8. Step 8

    Serve on a warm plate accompanied with parsley and sliced beefsteak tomatoes.
