How to Prepare Crab Meat in Tomato Shells

A light and cooling appetizer.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 6 ½ ounces crab meat
  • 4 tomatoes, medium-sized
  • ½ cup cucumber pulp
  • ½ cup tomato pulp
  • ¾ cup carrot, shredded
  • aioli
  • ½ teaspoon sea salt
  • Romaine lettuce
  • Watercress sprigs

Step1
Scoop the seeds and pulp out of the tomatoes. Shred the carrot.
Step2
With a sharp kitchen knife, remove the spines from the crab meat, then wash the meat and drain in a sieve.
Step3
Stir the carrot and cucumber and tomato pulps in with the crab meat.
Step4
Add in aioli and salt. Mix well and scoop the mixture into the hollowed tomatoes.
Step5
Refrigerate. Serve on a bed of Romaine lettuce, along with sprigs of watercress.
Step6
Yield: serves 4.
