How to Prepare Mom's Texas-Style Zucchini Bread

Zucchini bread--you'll "loaf" it.

Instructions

Things You'll Need:

  • 3 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • ¾ cup pecans
  • 3 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 2 teaspoons vanilla
  • 2 cups zucchini, drained
  • 1 8-ounce pineapple
  1. Step 1

    Combine dry ingredients and pecans, then set aside.

  2. Step 2

    Beat eggs, adding oil, sugar and vanilla, then beat until creamy.

  3. Step 3

    Stir in zucchini and pineapple.

  4. Step 4

    Add dry ingredients, stirring until everything dry has been moistened.

  5. Step 5

    Spoon into 2 well-floured and greased loaf pans.

  6. Step 6

    Cook for 1 hour at 350 degrees.

  7. Step 7

    Makes 2 8x4x3-inch loaves.
