Often times we don't have the time to create a whole chicken dinner. The answer to this problem: a crock pot and a bottle of Italian salad dressing! It's ridiculously easy and the result tastes like you've been in the kitchen for hours.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1 whole chicken
  • 1 bottle of Italian salad dressing
  • 1 lemon
  • 1/2 onion
  • Red, yellow, or orange bell pepper
  • Crock pot

Step1
Remove all the innards from the chicken. Throw the chicken into the crock pot. Make sure that the breast meat is facing the top.
Step2
Cut the lemon into medium-sized wedges. Cut the onion and bell peppers into medium-sized slivers.
Step3
Stuff the inside of the chicken with an equal amount of lemon wedges, onion slivers and bell pepper slivers.
Step4
Put the remaining bell peppers and onions into the pot around the chicken and a few on top of the bird. Lay the remaining lemon wedges on top of the chicken in a line. Squeeze 2 or 3 lemons over the mix.
Step5
Crack open your bottle of Italian dressing. Pour the whole bottle on top of the chicken.
Step6
Set the crock pot on low for 5.5 hours. Alternatively, cook on high for 1.5 hours and then on low for 2 more hours. When it's done, you can serve it with rice, mashed potatoes or dinner rolls.

Tips & Warnings

  • When you put the chicken in the crock pot, you can lightly season it with salt and pepper.
  • You can cut the chicken skins off if desired.
  • Don't overcook your chicken! If you overcook it, it will fall apart, bones and all.
  • If you cut into the chicken and you see pink blood, cook it some more.
  • Don't use creamy Italian dressing.
