Kefir is a tangy yogurt drink originating from the Middle East. It is a delicious, healthy drink that soothes the digestion. Read on to learn how to make kefir.

Instructions

Things You'll Need:

  • 1 quart whole or skim milk
  • 1/2 cup prepared kefir (from a previous batch or purchased at the grocery store)
  • glass or stainless steel 2 quart saucepan
  • 1 quart jar
  • thermometer

    How to Make Kefir

  1. Step 1

    Heat the milk in the saucepan to 110 F.

  2. Step 2

    Mix in the kefir and pour the mixture into the jar.

  3. Step 3

    Cover the jar and let it stand for eight to 24 hours. Warmer temperatures will set faster, while cool will lead to a slower development. The liquid should be thick and custard-like.

  4. Step 4

    Shake the jar and chill thoroughly. Shake again before serving.

Tips & Warnings
  • Mix with two tbsp. of honey and a half tsp. vanilla before chilling to create a sweeter drink. You can also blend with fruit for a healthy smoothie.
