Things You'll Need:
- 1 quart whole or skim milk
- 1/2 cup prepared kefir (from a previous batch or purchased at the grocery store)
- glass or stainless steel 2 quart saucepan
- 1 quart jar
- thermometer

Step 1
Heat the milk in the saucepan to 110 F.

Mix in the kefir and pour the mixture into the jar.

Step 3
Cover the jar and let it stand for eight to 24 hours. Warmer temperatures will set faster, while cool will lead to a slower development. The liquid should be thick and custard-like.

Step 4
Shake the jar and chill thoroughly. Shake again before serving.
