You can substitute it for lamb in most recipes. It's tender meat makes it ideal for roasting. Follow these steps to buy roasting goats.

    Ask your local butcher if he carries goat. Tell him you need a headless roasting goat.

  2. Step 2

    Go to the grocery store and see if there's any goat meat in the meat case. If so, ask the butcher if he has the ability to order you a whole roasting goat.

    Check your area for a meat processor that is USDA inspected. This will ensure that you're getting high quality goat that is treated humanely.
