Everyone loves a good barbecued chicken. Diabetics are not any different. Their problem is that they have to count and watch all the sugars they eat. Barbecue sauces have too much sugar in them which carmelizes while cooking. That compounds the sugar issue for the diabetic at your barbecue. Here is a recipe for barbecue sauce made from vinegar, ketchup and Tobasco sauce which is sure to please even the heartiest of palate and not make the diabetic feel deprived.

Things You'll Need:

  • One 2 lb. fryer
  • 1/4 cup vinegar
  • 1/2 cup ketchup
  • Dash of Tabasco sauce
  • basting brush
  • baking pan
  • oven

    How to Barbecue Chicken for Diabetics

  1. Step 1

    Preheat oven to 350 degrees F.

  2. Step 2

    Cut up the chicken. If you are in a hurry, you can buy two pounds of chicken pre-cut at the grocery store.

  3. Step 3

    Place the chicken pieces in a baking pan, skin side down.

  4. Step 4

    Mix the vinegar, ketchup and Tabasco sauce in a small bowl or two cup measuring cup.

  5. Step 5

    Pour the mixture over the chicken. Baste the chicken well by turning it over a few times in the pan, making sure to coat the entire chicken with the mixture.

  6. Step 6

    Bake at 350 degrees F for one half hour. Turn the chicken and using the basting brush, baste it again in its own juices. Bake for 1/2 hour more.

  7. Step 7

    This recipe makes enough for four servings. One serving of chicken counts as three meats on the diabetic exchange list.

Tips & Warnings
  • You can also grill with this recipe, however make sure to marinate the chicken three hours in the mixture, before grilling. Save some of the mixture for additional basting while grilling.
